Rapini

About this recipe

Rapini is somewhere between broccoli, spinach, and dandelions. It’s pure energy food—and there is nothing better for you. Today, regular people eat it because of its health value. We’ve always eaten it because it grows on our front lawn.

Instructions

Wash rapini, cut bottoms off, and boil in salted water for 2-3 minutes (until stems are soft). Then drain well and dress with:

  • olive oil,
  • salt and pepper.

You could also add some chopped fresh garlic.

Notes

  • Rapini is also knowm as broccoli rabe. It's not broccolini.
  • You can do the same thing with Swiss chard or collard greens. 
  •  
    With Swiss chard, you can make a little sauce with olive oil, garlic, a couple hand-squashed tomatoes, salt, and pepper. Then add the boiled chard to the sauce and let cook another few minutes.
