Grilled Swordfish

About this recipe

You can do this with almost any steak fish (like marlin, mahi-mahi, halibut, or salmon).

In a bowl, mix together:

  • 4 tbsp. olive oil,
  • 4 cloves fresh garlic (chopped),
  • 4 tbsp. chopped fresh parsley,
  • juice from 1 fresh lemon,
  • ¼ tsp. salt and ¼ tsp. black pepper.

Marinate 2 lb. swordfish on the counter or in the refrigerator for 15-60 minutes. (If it’s a hot day, use the fridge; if it’s cold out, use the counter.)

Barbecue on medium for approx. 5 minutes per side; it’s done when it looks cooked and the fish flakes.

You can baste with the remaining marinade while barbecuing.
