Cabbage with Potatoes

If you like cabbage, you'll like this dish. Otherwise, you might find it boring. My Zia Lina made this for me in Italy, and I found it fantastic. (But I don't know about you.)

Instructions

Cut up:

  • 1 nice Savoy cabbage (discarding outer leaves and thick stems).

Boil in salted water along with:

  • 1 large potato (peeled and cut up).

Cook until the cabbage is soft and the potato is cooked (about 20 minutes). Drain.

In a large frying pan, fry:

  • 2-3 tbsp. olive oil,
  • 2-3 cloves garlic (left whole and squashed).

Fry garlic long enough to flavour the oil, and then remove (don’t let it burn).

Add the cabbage along with:

  • a little rosemary (not too much, chopped),
  • ¾ tsp. salt and ½ tsp. black pepper.

Mash up the potato a little and fry 20 minutes more. Bingo, you’re done.

Notes

    This goes really nice with sausages or cutlets of some kind. Get a real German thing going.
