Green Beans with Potatoes |

Green beans were voted “best vegetable” at last year’s family picnic, and it’s all because of this recipe.
Instructions
Boil diced potatoes in salted water until half-cooked (about 10 minutes). Then add green string-beans (washed, with both ends snapped off). Boil another 10-15 minutes.
When vegetables are ready, drain, mash potatoes a little with a fork, and toss with olive oil, salt, and pepper.
Notes
- The potatoes should be mashed throughout the beans.
- Because green beans are dense, you need sufficient salt.
- You can also do this with baby new potatoes, cut in half (don’t mash them).
- And your potatoes don’t have to be peeled (especially if using baby potatoes).
