Baked Arctic Char

About this recipe

This is a great way to get more fish into your life, and it works with almost every type (e.g., salmon, steelhead trout). Pat this dressing over top or stuff into a whole fish. 

Instructions

Dressing

In a small bowl, mix together:

  • 1 cup breadcrumbs,
  • 3-4 cloves fresh garlic (minced),
  • 6-7 tbsp. chopped fresh parsley,
  • 2 tbsp. olive oil,
  • grated rind from 1 fresh lemon,
  • juice from the aforementioned lemon,
  • ½ tsp. salt and ¼ tsp. black pepper.

Toss ingredients with a fork until breadcrumbs are well coated (and there are no clumps).

Spray cookie sheet with Pam or use parchment paper. Place on sheet:

  • 3 lb. Arctic char, salmon, or steelhead trout. 

Lightly brush with olive oil, and lightly salt and pepper. Then pat fillets with dressing and maybe place fresh lemon slices on top. Bake at 400°F (even 425°F) for approx. 20 minutes. It's done when the internal temperature hits 160 and fish flakes. 

Notes

  • If doing a whole fish, first rub the outside with olive oil, and then stuff dressing into whole fish.
  •  
    Thicker the fish, the longer you cook it. Thinner the fish, the shorter you cook it. Something like sole can take only 10 minutes. Whale can roast for hours.
