Baked Arctic Char

About this recipe

This is a great way to get more fish into your life, and it works with almost every type (salmon, trout, snapper, sole, etc.). Pat this dressing over top (not too much) or stuff into a whole fish. 

Instructions

Dressing

In a small bowl, mix together:

  • 1 cup breadcrumbs,
  • 3-4 cloves fresh garlic (minced),
  • 3-4 tbsp. chopped fresh parsley,
  • 2 tbsp. olive oil,
  • the juice from 1 fresh lemon,
  • maybe a little grated rind from the aforementioned lemon,
  • ½ tsp. salt and ¼ tsp. black pepper.

Toss ingredients with a fork until breadcrumbs are well coated (and there are no clumps).

Spray cookie sheet with Pam. Place 3 lb. Arctic char on sheet. Lightly brush with olive oil, and lightly salt and pepper.

Pat fillets with dressing (you'll use about half of what you made). Bake at 350°F for approx. 20 minutes (when fish flakes, it’s done). 

Squeeze more fresh lemon over top before serving.

Notes

  • If doing a whole fish, first rub the outside with olive oil, and then stiff dressing into whole fish.
