Elsie's Potatoes

About this recipe

These are Mom's special treat. Usually served with barbecue, this variation is a nice change from same-old, same-old potatoes. (It's the vinegar that makes them different.)


Peel table potatoes and boil until done (test by piercing with a fork). Drain, put into a bowl, and break up using a different fork. Then toss with:

  • salt,
  • pepper,
  • a little olive oil,
  • a little white vinegar, 
  • chopped fresh parsley.


    If the potatoes don’t taste good, yell at 'em.
