Savoiardi

About this recipe

You'll love this lemony treat, famous throughout Italy. It's the icing sugar that makes Savoiardi different, plus the lemon (because you guys don't really know lemon). P.S. You can half the recipe.

Instructions

Into a bowl, break:

  • 6 large eggs.

Whisk them along with:

  • 1 cup vegetable oil,
  • 1 cup sugar,
  • 1 tsp. vanilla,
  • grated rind from 1 whole lemon,
  • 3-4 cups flour,
  • 6 tsp. baking powder.

Keep whisking until you get something that looks a little thicker than pancake batter. Then with a tablespoon, drop spoonfuls into icing sugar and roll them around with your hands into little sausage rolls. Put on a cookie sheet.

Bake at 375°F for 12-15 minutes.

Notes

  • Yield should be 36 cookies.
  • These guys freeze really well.
  • You can also add the lemon juice.

    Sift your icing sugar if it looks lumpy.
