Barbecued Tomatoes

About this recipe

Make these in August with large, firm, ripe tomatoes (like Dolly Parton used to have).

Instructions

Slice tomatoes in half widthwise, and top with:

  • salt,
  • pepper,
  • chopped fresh parsley,
  • chopped fresh garlic.

Preheat grill and spray with Pam (or grease with oil using a paper towel). Barbecue on low heat until bottoms are black. While cooking, push them around with two forks, not tongs (so they don’t bust—hey, another Dolly Parton reference!).

When done, drizzle olive oil over top.

Notes

  • The trick is to ensure they don't stick to the grill. Use your forks to lift and turn a few times.
  •  
    You could also mix the above ingredients with breadcrumbs and pat on top of the tomatoes. You can also slice these guys and put them on crostini for a different kind of bruschetta.
