Barbecued Tomatoes

Make these in August with large, firm, ripe tomatoes (like Dolly Parton used to have).

Instructions

Slice tomatoes in half widthwise, and top with:

  • salt,
  • pepper,
  • chopped fresh parsley,
  • chopped fresh garlic.

Spray grill with Pam and barbecue on low heat until bottoms are black. While cooking, push them around with a fork, not tongs (so they don’t bust—hey, another Dolly Parton reference!).

When done, drizzle olive oil over top.

    You could also mix the above ingredients with bread crumbs and pat on top of the tomatoes. You can also slice these guys and put them on crostini for a different kind of bruschetta.
