Bina's Bread

Bina is a good family friend who is from a part of Italy just south of us. She’s also a great cook.

Instructions

Slice a pagnotta loaf in half lengthwise (it’s the big round one with a hole like a donut). Lightly toast in the oven on broil.

Brush olive oil on each half, and then season with salt, pepper, and oregano.

Thinly slice a tomato and place on bread. Grab the salt, pepper, and oregano one more time and season the tomatoes. Drizzle a little more olive oil over the tomatoes and sprinkle some shredded mozzarella on top as well. Reheat in oven, slice, and serve.

Notes

  • You have to lightly toast the first time.
  • Instead of seasoning the tomatoes then drizzling, you can brush them with oil before seasoning—it doesn’t matter. 
  •  
    The first time you make something, you rely on common sense. The second time, you add experience. So make the first half, and then make the other. (Good idea, huh?)
