Roasted Acorn Squash |
About this recipe
Also called pepper squash, this veggie roasts well in the oven. Cut whole squashasees into quarters or halves, clean out the insides, season, roast, and then cut into smaller pieces once done.
Instructions
Quickly wash outside of squash with water, then cut into halves or quarters depending on their size. Take a spoon and scoop out the seeds and stringy matter from inside. Once cleaned, season with:
- olive oil,
- salt and pepper,
- garlic powder or garlic salt (chopped fresh might burn),
- maybe a dab of butter,
- honey or a spoonful of brown sugar.
Prepare a cookie sheet with aluminum foil or parchment paper underneath. Drizzle oil on the covering, place the squash, and roast for 45 minutes at 425°F (like roasting regular vegetables). Mix halfway through and baste using a small brush so moisture goes everywhere.
Once done, cut into smaller pieces appropriate for serving.
Notes
- This recipe works with many types of squashasees like butternut.
- You can stuff centres with a rice / breadcrumb / Parmesan cheese concoction.
